Spaghetti with garlic and chili peppers

Ingredients: 160 g spaghetti, 2 garlic cloves, 1 fresh chili pepper, 1 spoon of freshly chopped parsley, extra virgin olive oil, salt.

Directions:

Boil the spaghetti in salted water. Clean the onion and chop it to small pieces, just like parsley. Clean the pepper, and chop as well.

At a low heat in the pan, heat eight tablespoons of olive oil. Warm it, but do not reach the point of boiling. Add chopped onion and pepper to olive oil. Mix a minute in a low fire, and then turn off the stove and leave aside to marinate. Then add parsley and mix everything well.

Add half a cup of water in which the spaghetti were cooking, then add spaghetti, and stir everything.

Sea Bream with herbs

Ingredients: 2 sea breams, 2 sprigs of fresh rosemary, 1 tablespoon of rosemary needles, 4 leaves of fresh basil, parsley bundle, 6 cloves of garlic, 1 lemon, 4 tablespoons of olive oil, 800 grams of potato, salt and freshly ground pepper.

Directions:

Warm up the oven to 200 degrees. Oil the casserole.

Clean, rinse, and dry the fish with a paper napkin, and trim it on both sides in three places. Season with salt and pepper the fish inside and out, and pour two tablespoons of olive oil and some lemon juice and sprinkle with a lemon peel (use half a lemon only).

Inside of each fish put one clove of garlic, rosemary, basil leaves, a little parsley, and a slice of lemon. Leave to marinate while preparing potatoes.

Peel potatoes, wash and cut into slices. Dry it well, season it with salt and pepper. Add needles of rosemary and chopped remaining spice herbs. Pour the potatoes with two tablespoons of olive oil, and then add a grated peel of half a lemon. Mix and put it on the baking sheet.

Add remaining part of the onion (unpeeled) and bake for about 20 minutes. Then place sea breams on potatoes and, if you want, place two rings of lemon on each fish. Bake it all together for another 25 minutes.

Mediterranean pizza

Ingredients: pizza pastry, 2 tablespoons of tomato, 180 g of can tuna, 50 g of red pepper, 6 black olives, 1 cup of mozzarella, 1 cup of gouda cheese, 4 leaves of basil.

Directions:

Preparation of dough: dissolve a yeast pack with a spoon of sugar in half a liter of lukewarm milk. When the yeast starts to come up, add 2-3 tablespoons of oil, a spoonful of salt and flour just enough to make it softer, stretchy dough. Leave the dough to rise, after that mix it one more time and make the shape of pizza.

Heat the oven to 220 degrees. Place the dough on the baking tray. Put a spoon of tomato sauce and spread it over the dough. Arrange tuna on the pizza. Add pepper and olives.

Mix mozzarella and gouda in a bowl, then sprinkle over pizza. Bake in the oven for ten minutes, or until cheese melts. Take it out of the oven, put on the plate and serve.

A quick tiramisu in the glass

Ingredients: 120 g of powdered sugar, 300 g of sweet cream, 250 g of mascarpone cheese, biscuits, vanilla extract, cup of strong coffee.

Directions:

Put the powdered sugar in the bowl, add the cream, and whisk well together to get whipped cream.

Put mascarpone cheese and vanilla extract in the second bowl and mix well. Add to the whipped cream and mix it all together. Cut the biscuits into half, dip them in a cup of coffee and put in a serving bowl. Pour with a mixture of cheese and cream and sprinkle on top with the cocoa or grated chocolate.
